Tatsoi
Tatsoi is an Asian green also known as spinach mustard. The Esselstyn Foundation’s August 2025 newsletter has this to say about tatsoi:
Nutritional superstar: Tatsoi packs a nutritional punch. This green is endowed with ample reserves of beta-carotene, vitamins C, K, and A, as well as iron, calcium, potassium and phosphorus. It also contains an impressive amount of protein and a good amount of dietary fiber, too. Most importantly, it has a stronger nutritional profile than spinach.
Best way to eat Tatsoi? Treat it like any of your favorite greens:
Add to mixed salads
Use a handful as a base for bowl building
Steam and serve with a good balsamic glaze
Chop up and add to any pasta sauce, stew, or chili
Layer into lasagna
Dip raw stalks into your favorite hummus”
